In Tuscany and Umbria, some of the best autumn mornings begin in the woods. The air is cooler, the ground softer after the first rains, and truffle dogs head out with their noses low, moving through oak forests, vineyards and private estates in search of what is hidden beneath the soil.
It is a ritual that belongs to the season as much as grape harvests, chestnuts or long lunches. And at the right place, it becomes part of the stay itself. You might wake up in a restored stone villa, an art-filled estate or a small contemporary lodge, then spend the morning following a dog through the forest before returning for fresh pasta, local wine and whatever the hunt has turned up.
These four design-led hotels and estates in Tuscany and Umbria bring those two sides together: beautiful places to stay, and a genuine reason to leave the room.
The name gives away part of the story. The Black Truffle Lodge sits at the edge of Pettino, a tiny mountain village in Umbria, on a centuries-old family estate where truffle hunting has long been part of local life.
There are only two suites, both spread over two floors in a restored rural farmhouse. Contemporary Italian furniture sits alongside local antiques, Umbrian materials and fireplaces, while each suite has its own private jacuzzi. It feels less like a hotel and more like being invited into a particularly polished version of village life.
But the reason to come in autumn is outside. The family behind the lodge has been organising truffle hunts through Wild Foods Italy for years. Guests head into the surrounding countryside with local hunter Luca and his dogs, searching for truffles before returning for a traditional Umbrian lunch built around what grows here. For stays of two nights or more, the truffle experience is included.
Why now: For a stay where truffles are not a theme on the menu, but part of the place itself.

Villa Lena has always blurred the line between hotel, farm and creative retreat. A 19th-century villa sits at the centre of a 500-hectare estate between Pisa and Florence, surrounded by woodland, vineyards, olive groves and organic gardens. Around it, former stables, farmhouses and country houses have been turned into rooms, apartments and private villas filled with original artworks and work by local craftspeople.
By autumn, attention shifts towards the woods.
From October through April, guests leave early in the morning with Villa Lena’s agriculture team and their truffle dogs. The hunt takes place within the estate’s own woodland, where white truffles grow naturally beneath the trees. After around ninety minutes outside, the group returns to the villa and the morning’s finds make their way onto the table, usually over fresh pasta and a glass of Villa Lena wine.
The combination feels particularly right here. Villa Lena is built around the idea that guests should participate in the life of the estate rather than simply observe it. One day that might mean stepping into an artist’s studio. In autumn, it can mean following a dog into the woods.
Why now: White truffle season runs from October into winter, when Villa Lena’s forests become as important as its pools and studios.

Tenuta di Murlo is less a hotel than an entire piece of Umbrian countryside. The historic private estate stretches across thousands of hectares of woodland, olive groves, valleys, lakes and streams outside Perugia. Scattered through it are old stone houses, towers and former settlements that have been restored into independent villas, some for two guests, others large enough for an extended family or group of friends.
That scale changes the experience. You are not simply looking out over the landscape. You are living somewhere inside it. Murlo’s truffle hunt follows the estate’s own dogs into the forest. Their current experience describes the dogs as part of the rhythm of the hunt, moving slowly through woodland where the prize stays invisible until a nose finds it.
It is perhaps the most romantic version of the idea on this list: waking in a restored Umbrian villa, walking straight into an enormous private estate and letting four-legged guides decide where the morning takes you.
Why now: For the moment when an Umbrian villa holiday moves beyond the pool and into the woods.

Castelfalfi works at a completely different scale. The destination brings together a medieval Tuscan village, contemporary hotel accommodation, restaurants, spa and a large surrounding estate. Rather than preserving the borgo as scenery, Castelfalfi has turned it into the centre of a much broader stay shaped around the landscape around it. That includes the forest.
Its Truffle Hunt & Dine experience heads into the woods surrounding Castelfalfi with a local truffle expert and trained dogs. Guests learn how different Tuscan truffles grow, where to look for them and, most importantly, when to stop looking and let the dogs take over. The hunt can finish with a truffle-focused lunch or dinner back at the resort.
The season is longer than you might expect. Different varieties appear throughout the year, but autumn brings the most coveted period, including precious white truffles from September into December.
Why now: For a polished Tuscan resort stay with a morning spent somewhere considerably muddier.

Truffle hunting is one of those activities that sounds slightly staged until you actually see it happen. There is no obvious trail. No neat row of trees. No sign telling you where to stop. Instead, a dog moves through the forest, nose close to the ground, suddenly becomes interested in one unremarkable patch of earth and starts to dig.
That is precisely why these stays work so well in autumn. The hotel is only the beginning of the story. The reason to travel is happening outside it: under oak trees, along damp woodland paths and somewhere a few centimetres beneath the soil.
